Hawaiian Pizza Toast Cups
Need an easy win for school holidays or a quick family snack? These Hawaiian pizza toast cups are fun, filling and perfect for busy Kiwi days.
Ingredients
12 slices Hi-Fibre Lo-GI White Block Loaf
Olive oil spray
½ cup pizza tomato paste
1 cup shredded mozzarella
150g diced ham or crispy bacon bits
½ cup finely chopped pineapple
1 tbsp Italian seasoning
Fresh basil, to serve
Method
STEP 1
Preheat fan forced oven to 180°C. Spray a 12-cup muffin tray
STEP 2
Slice the crust off each slice of bread
STEP 3
Roll each bread slice flat with a rolling pin and cut one side into the middle, then press firmly into each muffin cup to form little shells
STEP 4
Add a small dollop of pizza tomato paste to each one
STEP 5
Sprinkle in a little mozzarella, then add ham/bacon and pineapple
STEP 6
Top with the remaining mozzarella and a pinch of Italian seasoning
STEP 7
Bake for 15 minutes or until golden and crisp
STEP 8
Remove carefully, cool slightly, finish with fresh basil, and devour
