Cheesy Italian Meatball Sub Recipe

Looking for an easy dinner that’ll hit the spot? This cheesy meatball sub is a proper comfort-food winner, perfect for a relaxed night in.

Ingredients

Meatballs & Sauce

300g beef mince
300g pork mince
1 egg
1/4 cup breadcrumbs
1 tbsp dried Italian herbs
1 tbsp fresh parsley, finely chopped (plus extra to serve)
1 garlic clove, minced
Salt and pepper, to taste
1 tbsp olive oil
1/2 red onion, finely diced
2 garlic cloves, minced
1 x 400g can crushed tomatoes
1 x 500g jar marinara sauce

Garlic Bread Subs

1 Bakers Delight French Baguette
4 tbsp butter, melted
2 garlic cloves, minced
2 tbsp fresh basil, finely chopped
250g fresh mozzarella, torn into pieces
1/4 cup pesto
Grated parmesan, to serve

Method

STEP 1

In a large bowl, combine the beef mince, pork mince, egg, breadcrumbs, Italian herbs, parsley, garlic, salt and pepper. Mix until just combined, then roll into 12 evenly sized meatballs

STEP 2

Heat the olive oil in a large deep frying pan or pot over medium heat. Add the onion and cook for 2-3 minutes until softened. Stir through the garlic and cook for another minute

STEP 3

Pour in the crushed tomatoes and marinara sauce, stirring to combine. Bring to a gentle simmer, then carefully add the meatballs. Cover and cook for 20-25 minutes, gently turning the meatballs halfway through, until cooked through

STEP 4

Meanwhile, cut the Bakers Delight Baguette in half, then slice each half lengthways all the way through to create 4 long pieces

STEP 5

Mix together the melted butter, garlic and parsley, then generously brush over all four pieces of bread

STEP 6

Place the two bottom pieces onto a baking tray and top evenly with the torn mozzarella. Place the two top pieces alongside. Bake at 200°C (180°C fan-forced) for 10-12 minutes, or until the bread is golden and the mozzarella has melted

STEP 7

Spread the pesto over the toasted top pieces

STEP 8

Spoon 6 meatballs onto each cheesy bread base, along with plenty of the marinara sauce. Sprinkle generously with grated parmesan and a little extra chopped basil

STEP 9

Place the pesto bread on top, then slice each large sandwich in half to make 4 garlic bread subs. Serve immediately while warm
