To-Thai-For Tuna Cakes
Looking for a quick fix weeknight dinner? This Thai-riffic tuna patty meal is ready in just half an hour.
Ingredients
6 slices Bakers Delight Wholemeal Loaf
3 eggs
2 tbsp chopped chives
2 tbsp chopped basil
Plain tuna drained, 425g
2 eggs
Coriander
1 lime
2 tspn lemon juice
3 tbsp grated parmesan cheese
10 tbsp bread crumbs
3 tbsp diced onion
1 pinch ground black pepper
3 tbsp vegetable oil
Method
STEP 1
Preheat oven to 180°C
STEP 2
Blitz bread slices in a food processor to make bread crumbs
STEP 3
Mix eggs and lemon juice in a bowl then stir in parmesan cheese, bread crumbs and herbs. Stir in tuna and diced onion until well combined. Season with black pepper
STEP 4
Shape tuna mixture into eight 2.5cm thick patties
STEP 5
Place in oven tray and bake for 15-20 minutes or until golden
STEP 6
Combine greek yogurt with sriracha for a tasty dipping sauce and drizzle tuna cakes with lime
STEP 7
Serve with salad or your choice of vegetables
