Ricotta and Blueberry Croffle

Love waffles and croissants? Get the best of both worlds with this Ricotta & Blueberry Croffle! This quick and easy dessert recipe is perfect for impressing guests or treating yourself.

Made with our buttery, flaky Croissant, toasted until golden and crisp in a waffle maker, it creates the perfect base for whipped ricotta, sweet blueberries, and a drizzle of honey. Ready in minutes, this is a must-try dessert for any occasion!

Ingredients

1 Bakers Delight Croissant
200g light ricotta
1 tbsp olive oil
1/2 tsp salt
1/2 punnet blueberries
1 tbsp honey
1 tbsp icing sugar

 

Method

STEP 1

Heat the croissant in the microwave for 10 seconds to soften slightly

STEP 2

Place the croissant into the waffle maker for 2 minutes or until crispy

STEP 3

Meanwhile, whip together the ricotta, olive oil and salt in a blender or food processor

STEP 4

Place in a piping bag or snap lock bag and cut the corner

STEP 5

Remove the croissant from the waffle maker and assemble with the ricotta, blueberries, drizzled honey and icing sugar!
