Lemon Tart Trifle

Serves  4                     Difficulty  Easy

When the sun’s out and you want something light but luxe, this trifle hits the spot. It’s a no-fuss dessert with big flavour that Kiwis will love.

Ingredients

1 pack of Lemon Tarts, roughly broken into bite-sized pieces
300 ml thickened cream, whipped until soft peaks form
1 pack of meringue baskets, crushed gently
1 punnet strawberries, cut into quarters
1 punnet blueberries
1 punnet raspberries

Method

STEP 1

Start layering in your trifle bowl. Spoon a layer of whipped cream into the base, scatter over a handful of broken lemon tart pieces, add a layer of crushed meringue and top with a mix of fresh berries

STEP 2

Repeat the layers: cream, tart, meringue, berries until the bowl is full or you run out of ingredients

STEP 3

Top the trifle with a few extra lemon tart pieces and a generous handful of fresh berries for a vibrant, summery look

STEP 4

Serve immediately or chill for up to 2 hours if you prefer it slightly set
