Grilled Caprese Baguette

Everyone loves a Caprese Salad in Summer. Combine it with bread and you’ve got a delicious entertaining recipe! This isn’t just any plain Caprese sandwich! Our Grilled Caprese Baguette recipe is packed full with tasty fresh ingredients like cherry tomatoes and crunchy, yet soft baguette roll. The best bit? It’s super easy and quick to make, perfect for feeding a crowd.


1 Bakers Delight White Breadstick

400g mixed cherry tomatoes, halved
2 tbs extra virgin olive oil
50g baby rocket leaves
¼ cup (20g) finely grated parmesan
¼ cup (40g) pine nuts, toasted
1 garlic clove, quartered
¼ cup (60ml) extra virgin olive oil, extra
1 tbs lemon juice
150g burrata, torn
Basil leaves, to serve
Balsamic glaze, to serve



Preheat oven to 200°C. Line a baking tray with baking paper


Place tomato on the lined tray and drizzle with oil. Season. Bake for 15-20 mins or until tomato begins to collapse. Set aside to cool slightly


Meanwhile, process the rocket, parmesan, pine nuts and garlic in a food processor until finely chopped. With the motor running, add the extra oil and lemon juice in a thin, steady stream until well combined. Season


Preheat grill to high. Cut the baguette in half lengthwise on a slight angle, then cut in half crossways. Place bread cut side up on an oven tray. Cook under the grill for 3 mins or until golden and toasted


Spread rocket mixture over bread and top with tomato and burrata. Sprinkle with basil leaves and drizzle with balsamic glaze. Season to serve.
