Crispy Kiwi Fish Burgers with Tartare Sauce

Ingredients
4 Bakers Delight Hi-Fibre Lo-GI Round Rolls
4 filets of white fish (eg. Ling) about 400g
100g Panko Crumbs
2 Eggs
1 cup flour
1 tsp garlic powder
1 tsp curry powder
1 tsp turmeric
1 Gem Lettuce, chopped
4 Slices Tasty Cheese
Tartare Sauce
Lemon to serve
Vegetable oil for frying
Method
STEP 1
In a bowl add flour, curry powder, garlic powder & turmeric. In a second bowl add two eggs and whisk. In a third bowl add the panko crumbs
STEP 2
To crumb your fish fillets, dip them in the seasoned flour, covering well, then coat in the egg mixture, then in the panko crumbs until well coated. Repeat with all pieces of fish.
STEP 3
Place a large fry pan over a high heat and add 1-2cm of oil to the pan, once hot add your fish and fry until golden on each side and cooked in the middle. Set aside.
STEP 4
To assemble your burgers, cut each roll in half, then spread the base of your roll with tartare sauce, top with lettuce, fish, slice of cheese and top half of roll with more tartare. Serve immediately
