Apple Pie Bake
Serves 6 Difficulty Easy
Keen for the best apple pie recipe? We’ve got you covered! Snuggle up with our homely dessert, blending classic apple pie with the comfort of bread & butter pudding. Made with our Hi-Fibre Lo-GI White Loaf, granny smith apples, and walnuts, it’s a fibre-rich treat. Serve warm with a big scoop of vanilla ice-cream.
Ingredients
6 slices Bakers Delight Hi-Fibre Lo-GI White Block Loaf
3 eggs, whisked
½ cup low-fat milk
1 tsp vanilla extract
1 tbsp cinnamon
3 large granny smith apples, peeled & chopped
½ cup walnuts, roughly chopped
½ cup brown sugar
3 tbsp corn flour
Vanilla ice cream to serve, if desired
Method
STEP 1
Pre-heat oven to 180°C. Lightly grease & line a 20cm diameter cake tin. Slice the 6 slices of bread into 1cm cubes & set aside
STEP 2
In a large bowl, combine the eggs, milk, vanilla & cinnamon. Stir to combine. Add the diced bread to the bowl & stir until the bread has absorbed the mixture. Pour the bread mixture into the bottom of the cake pan, pressing down lightly
STEP 3
In a large bowl, combine the apples, walnuts, brown sugar & corn flour. Mix until the apples are well coated & spread evenly across the top of the bread mixture in the cake tin
STEP 4
Bake for 45 minutes or until the edges are brown. Allow to cool slightly before slicing into six pieces, serve with a generous scoop of ice-cream, if desired
