Hot Cross Bun Breakfast Sandwiches

Looking for a breakfast that’s a little different but still easy to make? This hot cross bun sandwich brings together classic Kiwi brunch flavours with a festive twist.
Ingredients
2 Bakers Delight Traditional Hot Cross Buns, sliced in half
4 rashers bacon
2 eggs
2 slices tasty cheese
2 – 4 tbsp tomato relish
Butter, for toasting
Salt & pepper
Method
STEP 1
Lightly toast each half of the hot cross buns. Set aside
STEP 2
Heat a frying pan over medium heat. Cook bacon until golden and crispy to your liking. Remove from the pan and keep warm
STEP 3
In the same pan, crack in the eggs. Cook to your preference. Season with salt and pepper
STEP 4
On the base of each toasted bun, spoon over tomato relish and layer with slices of tasty cheese
STEP 5
Add the fried bacon and eggs
STEP 6
Top with the remaining bun halves, press gently, and serve immediately while warm
