Sweet Potato & Hummus Lunch Box Roll

Hi-Fibre Lo-GI Lunch Box Rolls are must-haves for hungry tummies. Combine our lunch box rolls with sweet potato and hummus and you have the perfect trio! No doubt this recipe will be a lunch time fave and a crowd pleaser.

Ingredients

1 Hi-Fibre Lo-GI Lunch Box Roll
1 tablespoon homemade or store-bought hummus
¼ cucumber, sliced
2 small sweet potato bites, homemade or store-bought. Broken up into small pieces

Method

STEP 1

Cut your Hi-Fibre Lo-GI Lunch Box Roll in half

STEP 2

On one half, evenly spread the hummus and place broken sweet potato bites on top

STEP 3

Place the cucumber slices on top of the sweet potato bites and press the remaining half on top to finish. Enjoy!
