Mexican Lunch Box Roll
Spice up the school lunches with this Mexican-inspired recipe using our freshly baked Hi-Fibre Lo-GI Lunch Box Rolls. Say goodbye to soggy sangas at the bottom of school bags!
Ingredients
Bakers Delight Hi-Fibre Lo-GI Lunch Box Roll 6-Pack
1 avocado, sliced
4 tbsp Mexican salsa
6 pre-cut tasty cheese slices
1 x 400g tin black beans, drained and mashed
1 tbsp Mexican seasoning
Method
STEP 1
Drain tin of black beans and place on a tea towel or paper towel. Squeeze gently to remove any excess liquid. Place beans into a bowl and using a potato masher or fork, gently mash beans until a soft mixture. Mix in Mexican seasoning
STEP 2
Cut rolls in half and arrange avocado slices evenly between roll bases
STEP 3
Spread 1 tbsp Mexican salsa on each of the roll lids
STEP 4
Divide mashed beans evenly on top of the avocado
STEP 5
Place cheese slices on top of beans and add roll top
