Easy Kiwi Summer Crostini

Fresh, light, and perfect for summer! Kiwi Summer Crostini pairs tangy goat cheese, seasonal fruit, and herbs for an easy, crowd-pleasing snack or appetiser.

Ingredients

1 x Bakers Delight White Breadstick
2 tbsp oil
120g goat cheese

Crostini Toppings

10 blueberries
2 crushed walnuts
1 sprig thyme
1 tbsp honey

3 thin slices of prosciutto
2 thin slices of peach
3 basil leaves
1 tbsp balsamic glaze

9 slices of strawberry
1 tbsp finely chopped mint
1 tbsp honey

3 thin slices of prosciutto
2 cherry tomatoes, quartered
3 basil leaves
1 tbsp balsamic glaze

Method

STEP 1

Preheat the oven to 180 degrees Celsius.

STEP 2

Cut the Baker Delight baguette into 12 even slices.

STEP 3

Place each piece of bread on a baking tray and top each piece evenly with olive oil. Bake for 6 minutes or until crusty (being careful not to burn as the edges will cook faster).

STEP 4

Remove from the oven and top all pieces with goat cheese.

STEP 5

Top each crostini with the above ingredients, serve and enjoy!
