Kale and Mushroom Fancy Toast
Add this superfood to your breakfast to kick start the day.
Ingredients
2 slices Wholemeal Block Loaf
2 tbsp olive oil
1/4 bunch kale, stalks removed, leaves chopped
4 Swiss button mushrooms, sliced
1 tsp lemon juice
1 tbsp feta
Zest of half a lemon
Method
STEP 1
Heat the oil in a frying pan on a medium-high heat. Add kale and cook until wilted a bit and tender. Set aside.
STEP 2
In the same frying pan, add the remaining oil and sliced mushrooms, and cook until tender. Add lemon juice and set side.
STEP 3
Toast bread in toaster to your liking.
STEP 4
Divide the kale between the toasts. Top with mushrooms.
