Healthy Shakshuka
With only a few ingredients, one pan and 30 minutes, you can enjoy a cafe-style shakshuka at home. Don’t forget to add our Sourdough Vienna to soak up every last mouthful!
Ingredients
2 cups (340g) butterbeans, drained and pureed
2 tbs olive oil
1/2 tsp salt
1/2 tsp cracked pepper
4 eggs
1 Bakers Delight Sourdough Vienna
1/4 avocado, sliced
1/4 cup (50g) goats cheese, crumbled
Coriander, to garnish
Lemon wedge, to garnish
Method
STEP 1
Pre-heat oven to 180°C
STEP 2
Place white beans, olive oil, salt and pepper into a medium bowl and purée using a stick blender
STEP 3
Transfer into a medium-sized frypan and using the back of a spoon create 4 shallow wells in the mixture. Crack eggs into each well, cover with foil and place in the oven for 20-25 minutes or until eggs are baked through
STEP 4
Five minutes prior to removing from the oven, place a skillet over high heat. Slice the Sourdough Vienna into four 2cm pieces and spray with olive oil. Grill bread for 2-3 minutes on each side or until charred
STEP 5
Remove shakshuka from oven and garnish with sliced avocado, goats cheese, coriander and lemon wedges. Serve
