Green Genius Brekky Bowl
We all know breakfast is the most important meal of the day, so start your day the right way with this easy green brekky bowl!
Ingredients
1 slice Bakers Delight Hi-Protein Wholegrain Loaf
1 egg boiled
1/2 cup cooked quinoa
1 tbsp chopped spring onion
1 tbsp chopped basil
1/4 cup feta
Method

STEP 1
Add 1/2 cup of uncooked quinoa and 1 cup of water and bring to a boil over medium-high heat, then lower the heat to a simmer and pop the lid on
STEP 2
Bring water to a boil in a saucepan, then reduce to a medium simmer. Gently lower 1 egg and cook for 5-7 minutes depending on how runny you like your yolks
STEP 3
Dice herbs and onion, toast bread and cut into croutons
STEP 4
Add cooked quinoa to bowl and layer the rest of the ingredients, adding sliced boiled egg once cooked. Crumble fetta onto the top and season with salt and pepper and a drizzle of olive oil
