Berry Chia Jam
Deliciously sweet and perfect on our Chia and Fruit Loaf
Ingredients
8 slices Bakers Delight Chia & Fruit Loaf
1 tbsp pure butter
2 cups mixed frozen berries
2 tbsp chia seeds
1 tbsp rice malt syrup
1 tbsp lemon juice
Method
STEP 1
Place berries, chia seeds and a tablespoon of water over low – medium heat, allowing berries to defrost and come to a simmer.
STEP 2
Add rice malt syrup and stir in. Let the mixture bubble away for 10 minutes or so until the mix thickens and becomes jammy.
STEP 3
When mixture is thick, remove from heat and stir through lemon juice and allow the mix to cool. You can serve jam warm or keep in a sealed container in the fridge, the jam will last several weeks but may need a little warm water added to it if it becomes too thick.
STEP 4
To serve, toast Chia & Fruit Loaf, spread with a little butter and jam and eat immediately.
